Our Cabernet is a California Bordeaux style that incorporates the traditional five grape varietals; Cabernet Sauvignon, Merlot, Petit Verdot, Cabernet Franc, and Malbec.
All the grapes were co-fermented together (this is the same way that the Chavez Family has fermented every Carlin’s Blend vintage). The grapes were cold soaked (cold-macerated) in a stainless-steel tank for 72 hours; post-cold soak, we inoculated it with our selected yeast. Fermentation took place over 26 days, and the wine was allowed to have a 72 hours extended maceration time to induce softer tannins and improve the texture and roundness. The wine was racked every 3 months for the first year and barrel aged for 28 months.
For this vintage of Carlin’s Blend, we produced 350 cases and used 80% Taransaud French Oak Barrels and 20% Demptos American Oak (Virginian Oak Barrels). There were only 14 barrels produced for the 2012 vintage. Case of 12 bottles. Regular Price $420 per case, now on sale!
