Only 11 barrels were made of the 2023 Cabernet Sauvignon, Petroni Vineyard, Cavedale Road Reserve. A worldly gem of a Cab with a crimson hue and a slight mauve meniscus. Bordeaux in style, this leather-clad, pipe-toting chap rings of blackberry and moist truffle notes set into a honeyed candle oak structure. As the bouquet opens, notes of passion fruit, forest loam, and grandpa's tobacco appear. On the palate, this wine is rip with lush berries and mineral-laden earth notes, conjuring dusty, old books and a crackling smokey fireplace. The tannins are present, but don't dominate, and lead to a coated mouthfeel. The finish is remembered long after the last drop, with aftertastes of well-made mature Cab. Try it with game, ribeye, roasted meats, beef stew, rack of lamb, and even swordfish and tuna steaks in hearty sauces. It is also perfect with aged dry cheddar.
