Unlike conventional white winemaking, where the skins are separated from the juice before fermentation, the process for orange wine is similar to red wine production, where the grape skins remain in contact with the juice. This prolonged contact with the skins imparts tannins, color, and flavor to the wine, resulting in a unique profile that can be described as having characteristics of both white and red wines. This winemaking approach harkens back to ancient traditions, allowing the white grape skins to remain in contact with the juice during fermentation, enriching the wine with color, tannins, and depth of flavor. Our grapes were picked at the end of October with 22% sugars, great acidity, and low pHs; We allow plenty of hang time to round off the tennis. 100% whole cluster, this wine went through an extended maceration to stimulate spontaneous fermentation giving this traditionally white wine a unique profile and an attractive amber hue. Instead of sulfites, we protect against oxidation using the help of CO2. Aged for 12 months in 100% French oak 500-liter puncheons. No shipping to AL, AR, ND, SD, DE, WY, WV, OK, KY, MS
